SUMMARY Generally found at larger facilities with 120 beds or more, this position assists the Food Services Manager and helps oversee the operation of the Food Service Department of a facility and the preparation, presentation and serving of food to residents in compliance with state and federal regulations.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following.

May assist with recruiting, hiring, providing orientation/training, and retaining a sufficient number of qualified staff to carry out the responsibilities of the facility's kitchen.
Ensures employee performance meets or exceeds expectations and periodic performance appraisals are conducted on a timely basis.
May plan menus that meet the nutritional needs of residents in accordance with recommended dietary allowance and state and federal regulations.
Helps supervise food preparation using techniques that conserve nutritional value, flavor, and appearance.
Assures food is prepared and served within scheduled time frames.
Orders food economically and efficiently from approved sources.
Ensures food is received, stored, prepared, held and served under sanitary conditions.
Completes required forms and documents in accordance withcompany policy and state and/or federal regulations.
Ensures quality assurance processes are followed in preparation of food.
Coordinates dining room services.
May oversee trash and waste disposal and ensures compliance with applicable regulations and guidelines.
ENTRY QUALIFICATIONS High school diploma or equivalent.
Successful completion or current enrollment in course approved by the Dietary Managers Association desired.
One (1) year supervised food service experience in an institutional setting focusing on planning, preparing and servicing regular and therapeutic diets.
May be filled by a Registered Dietitian.
Must meet state-specific requirements.
SUPERVISORY RESPONSIBILITIES Assists Manager with the supervision of the Food Services staff including Cooks, Aides, and others for whom they are administratively or professionally responsible.
Completes annual evaluations for potential merit increases for direct reports.
PHYSICAL DEMANDS AND ENVIRONMENT Working in institutional kitchen environment, employee may be required to sit, bend, stoop, see, talk and hear.
May occasionally lift or move items of up to 50 pounds.

OTHER REQUIREMENTS Participates in (or conducts) company-sponsored training to safeguard against improper use and disclosure of resident's protected health information.
